Salami / Dry-Cured Production Supervisor

We are seeking an experienced Salami / Dry-Cured Production Supervisor to oversee and coordinate production operations within a food manufacturing environment.

 The ideal candidate must have hands-on experience in salami production and dry-curing processes, with the ability to manage production activities, maintain quality standards, and ensure food safety compliance.

Key Responsibilities

• Supervise and coordinate daily salami and dry-cured meat production activities.
• Oversee curing, fermentation, drying, and maturation processes.
• Ensure production targets, quality standards, and deadlines are met.
• Monitor product quality, consistency, and food safety standards.
• Ensure compliance with hygiene, HACCP, and food safety procedures.
• Manage and supervise production staff, including task allocation and performance monitoring.
• Monitor raw materials, stock levels, and production waste.
• Identify and resolve production issues to minimise downtime and waste.
• Maintain accurate production records and reports.
• Ensure equipment, work areas, and production facilities meet hygiene and safety requirements.

• Proven experience in salami production and dry-cured meat manufacturing.
• Previous supervisory experience in a food production environment.
• Strong knowledge of curing, fermentation, drying, and meat processing techniques.
• Knowledge of food safety, hygiene, and quality control standards.
• Ability to manage production teams and meet operational targets.
• Strong organisational, problem-solving, and communication skills.
