Restaurant Manager

SUMMARY:
Fine Dining Restaurant at a luxury Wine Estate in Stellenbosch is looking for an experienced and guest-focused Restaurant Manager to join their team.

Working closely with the Food and Beverage Manager and Head Chef, the successful candidate will oversee restaurant operations, in-room dining and pool terrace service, ensuring exceptional guest experiences, efficient operations and strong profitability.

POSITION INFO:
Duties: Operations & Guest Experience: Coordinate daily operations across the restaurant, in-room dining and pool terrace. Maintain consistently high service standards and maximise guest satisfaction. Respond promptly and professionally to guest requests, feedback and complaints. Work closely with the kitchen and service teams to deliver a seamless dining experience. Wine & Beverage Service: Collaborate with the Sommelier on compiling and maintaining wine and beverage lists. Recommend suitable wines to guests and support knowledgeable beverage service. Ensure wine lists in guest rooms remain current. Staff & Stock Management: Recruit, supervise and manage the service team. Prepare staff rosters and control overtime. Oversee stock purchasing, stock levels and stock movement. Manage expenditure within approved stock budgets. Ensure compliance with sanitation and safety requirements. Requirements: Grade 12 Tertiary qualification in Food Services Management or Hospitality preferred. At least 2-3 years' Restaurant Manager experience within a 5-star or luxury establishment. A wine certification or equivalent practical experience. Previous fine dining experience aligned with Gourmet Guide or Eat Out standards would be advantageous. Excellent food and wine knowledge. Strong written and verbal communication skills. Confidence engaging with discerning guests. Excellent attention to detail, planning and organisational skills. Ability to remain composed and work effectively under pressure. A reliable, flexible, adaptable and self-disciplined approach. High standards of ethical and professional conduct.
